Does it NEED a remake? The graphics are relatively high poly for the time, there are no game breaking or balancing bugs, the controls are smoothly responsive and it had two sequels (Star Gladiator being the prequel).
I don't see what a remake could possibly add besides completely changing everything that made the original good in the first place.

The graphics were decent for Playstation. Star Gladiator 2/Plasma Sword was released around the same time as Soul Calibur and looked like a joke next to it.
