Because the anime is what litlle kids watch while waiting for the next Pokemon game to come out. It is what keeps the fan community going while GF does its thing with the games. It might not be as popular as before, but it is still something that keeps kids interested. And rather than creating a new main character everytime that will result in confusion within the fanbase, you unify them behind a single person. Not to mention, for the anime, Pikachu and Ash are a paired existence. You really can't have one without the other.

Just watched the new episode subbed. Wow. This is the first time I've thoroughly enjoyed an episode of SM. Not only was it a really fun episode, but it was also cool seeing how Ash, Misty and Brock just instantly clicked with each other in battle against Team Rocket like old times.

The next episode looks super hype, too. Poor Smokey is gonna get rocked by Brock, but I'm looking forward to Ash and Misty's match. They've been sitting on this rematch for 15 years.

I just hope things don't go back to being dull again right after the next episode.
