They aren't ranked up in any way except requesting ones from guests or getting them as rewards from leveling up your castle, but the second way is complete random

You're doing it wrong!

You only something relatively strong with False Swipe, Substitute and two other single-target moves with 20 PP each (or less, if you have berries - but this works best) that will kill any Ditto.

Turn 1 - set up Substitute. Ditto's Transform will fail and so will any future Imposter Dittos.

Use the adrenaline orb and then kill as usual. Transform only has 10 PP so you need to switch Dittos more often than with your method but trust me, it's a lot easier.

Once you've used your 40 killing attacks, the next one to appear (#41) will have 4 perfect IVs. False Swipe it, switch to a Pokemon that has Thunder Wave. Paralyse the Ditto (or the one that it calls in the turn you switch - either way you'll be ending the chain) and catch it. Done.

Adamant is good, Impish might be alright if you plan on keeping both, but I would highly recommend another Adamant so you can trade for a Pheromosa/Celesteela with it. Unless of course you plan on using the Impish, which actually isn't a bad idea as long as you keep Attack highest for Beast Boost

Any tips for chaining dittos? Also, the judge in front of the battle tree says I don't have anything impressive even when I show him a legendary. How do I wake him up?

Catch a Munchlax on route 1, relearn recycle, and delete the rest of its moves.
Catch an Alolan Meowth as low level as possible, and grind it up via zen bell + levels, relearn switcheroo on the Persian, and then put a leppa berry on it.

Find a Ditto, send in Munchlax so the Ditto transforms into it, and then switch into Persian to switcheroo a leppa berry onto it. It'll never struggle from this point.
False swipe it, use an adamant orb, and then substitute on your grinder pokémon to deny imposter transformations.

At 35~ (from my experience) the Ditto will be guaranteed to have four perfects, and catch it doing whatever. Personally I false swipe it, switch into my (weak) Persian for it to transform into, switch into a sleep inducer, sleep it, and then faint the Munchlax Ditto so the one you want to catch can't call for friends and make it more obnoxious.
