If you think that it's safe to spoof because you/your friend did it and didn't get banned yet then you really are mentally challenged.

Niantic doesn't care that banning spoofers right away would improve gym experience immensely, instead they just flag the accounts and ban them in waves every couple weeks or months because that's easier for them. If they instantly banned spoofing accounts then it would take a few hours for spoofers to figure out which parameters are getting them flagged and adjust, and that would force niantic to actually work and enhance their detection techniques every time.

And since everyone has learned that they are lazy fucks who even after enforcing the 0.37 client for close to two weeks let the 0.35 api still work for that long because they were too lazy to disable it, doing any kind of work more complex than copy pasting the egg code and changing it up a little (buddy system) or changing skins is a big nono, that's not feasible.

It's doubtful, due to being less than 50% the defender's strength.
Resisting water attacks won't take you far, Vaporeon is a damage sponge.

Parasect are decent for taking out Exeggutor if it has bug type moves though, due to Grass/Psychic being doubly weak, and 1/4 resistance to grass type attacks.

If you get that sort of disappearing HUD crap, you can usually still restart and try again.
Just as long as it doesn't despawn on the 15 minute timer really. Restarting app or fleeing from a Pokémon does not remove it from the map.
