This was the alpha version of the theme. Much better sounding imo, but I can see why they went with the current version in the game. My favourite part about this version is how they mix the screams with the music.

Mensis' ultimate goal was seemingly just ascension to a higher plane of consciousness, which they believed contact with a great one could facilitate. The beast scourge outbreak is just a side-effect of their ritual, since apparently the Moon Presence descending drives everyone with beastable blood into a maddened frenzy.

Mergo being Oedon's baby makes sense for a few reason.

Oedon's medium is blood, so it's a sensible candidate for all the shit that happens in the game, especially because Mergo's mother is also blood-based.

Mergo is never seen. It's "found" in an empty baby carriage, but heard all throughout the game world. Likewise, in the Yharnam boss fight, Mergo isn't seen but its crying can still be heard and that crying has powers over the player. Oedon's is formless and its power lies in voice.

I don't think Oedon is the great one that Mensis was beckoning, though because Oedon doesn't seem to have anything particularly related to the moon and the moon was the recurring symbol of the great one they were beckoning. Even in the Nightmare of Mensis, the giant pale white moon in the sky is very deliberately not above, but at the same elevation as the top of Mergo's loft. Plus if they had a way of getting someone knocked up with Oedon's child, then they probably already had contact with Oedon.
