Personally, I always liked the idea that a Caster route would include the Status Quo we saw in the doujin that famous shot of Shirou summoning her came from, IE Rin has summoned Gilgamesh and the strong implication that Kotomine's companion after the end of the 4th War was Saber instead of Gil.

Obviously there is a LOT to unpack and think out vis a vis motivations and backstory events with that altered status quo, but I think it sets up a really interesting dynamic, and Kotomine Plus Arturia is certainly a unique Final Boss to set Shirou up against.

Counter Guardians will show up during the apocalypse to save the world. Do note counter guardians can't show up until the apocalpyse is mid way through so most the world is dead every time emiya comes to save it, it's one of the reasons hes fucked up, hes seen thousands if not millions of dead people and his dreams of being a super hero aren't as grand as he thought.

Not quite basically the pool the grail can pick from is every person to have ever existed, past, future, present. It will mostly take from the hall of heroes though, but there are several counter guardians that it can take from as well.

The grail doesn't give a fuck about anything, hence arturia wasn't actually a heroic spirit she was still alive when the grail took her, meanwhile most the other servants are in fact dead and hiding up in the hall of heroes.

Also more mages weren't involved cause the war wasn't suppose to happen, no one could have even predicted a war was gonna happen just 10 years later.

Hell, in the Tiger Dojo they straight-up tell you if you try and skip out on the War that you need to straighten up and act like a Samurai, and if you watch their traditional values Shirou needs to hit all of them to survive - If you ever run away or try to let someone else fight for you, it always hits a death trigger. If you try and trust Saber and let her take the brunt of the fighting, you die. You spend most of the Fate route acting obstructively dull and he spends every sex scene pretending he doesn't want it as long as possible until the woman in question wonders if she's ugly or unwanted for some reason.
