Everywhere before and after Snowdin should be as populated and fun as Snowdin, with lots of stuff to interact with.
New Home should be an actual final town you have to go through with people to talk to.

A scene with Blooky and Mettaton meeting/making up, preferably as part of a Mettaton date.
A scene where you can have tea with Asgore and get a better perspective on him.

A playable, actual city before you reached Asgore's house would have been much better...

Others have mentioned most of the flaws, but something I would have liked would have been more consequences of killing monsters in neutral runs. My first non-pacifist run was one where I killed only Papyrus, as I wanted to know what Sans would say. The consequences of it startled me - not only all of Snowdin reacting, but Undyne's reaction, the changes in Sans ...

But Papyrus is the only one whose death has such severe consequences. If you kill Undyne or Mettaton or Toriel, nothing changes other than a few pieces of NPC dialogue and the ending. Imagine if Alphys reacted to Undyne's death so that when you meet her she runs away, and then when you try to follow her Mettaton bursts through the wall anyway for the quiz show because he didn't get the memo.

The parents need fleshed out in different ways. Asgore could have done with a bit more screentime, and Toriel needed the problems with her beliefs examined. An option to forgive or at least confront Alphys for roleplaying as your sidekick would be useful, because Mettaton's accusations basically cease to exist once you fight him.
