I wouldn't mind the battles having enemies with random (non-inflated) stats and skills, like they have in Training Tower/Tempest, since you can plan around them by making a varied team, especially when you aren't held back by gacha rolling. But you can't plan around missing three >90%s in a row.
Future FE maps should be the like the last battle of the Tempest trials: Some enemies have random (to a degree) stats and skills but need to be a certain movement type and maybe even weapon range type, like how an infantry 2 range always spawned next to Veronica. And some enemies have fixed stats and skills, like Veronica. That way, the maps are varied enough to be replayable without involving hit/crit/skill rates, while being consistent enough to allow for different team comps and not fucking you over with RNG. There'd need to be exceptions, like only axe enemies when you're just starting with your obligatory sword lord or making sure the latter maps aren't all a single weapon type/color, but overall I think it'd be a great change to FE as a whole.

And I like the Echoes thing too. It's a good way to let armors be tanky without them being unstoppable.
