I don't know what determines the winpose, but it's chosen before the match starts. If you go into versus mode, or even treasure battle, the winpose doesn't change until you change stages.

Alright guys just tested it myself, holding down the button DOES let you choose your winpose. If you don't believe me go to arcade battle, pick asuka and win the battle. 1 will the winpose where she's looking down at you and you can see her knockers 2, is probably the one where she's crouching point at you (I assume, this was the default one for the stage and I get it without pressing anything no matter what), 3 is the one where she turns around and walks away smugly, 4 is probably random. Harada is good friends with Ono so it wouldn't be off the cards. Not only that but Akuma in Tekken is great advertisement for Street Fighter so why would Capcom pass up on that. Also Tekken 8 would be a great opportunity to have Oni.
