You have to be willing to load a game now and then (or restart); if a series of unlucky rolls against the "rebellion chance" lets you go too long without a rebellion before the Taiping Rebellion, you'll lose. You need small rebellions every couple years, not a single huge one.
After the Taiping Rebellion you lose all the agitation modifiers and MIL starts blasting toward 0 until the Boxer events start raising it again in the 70s/80s, but you should westernize in the late 70s or early 80s (depending on how lucky you got on +RP modifiers early on) so it doesn't matter.

Never take "winds of westernization" unless you calculate that you'll be able to westernize with it in less than a couple years, as the +MIL modifier means that it's literally a matter of time (a couple years) until you get a 1000-strong rebellion.

It honestly is comparable to Ireland though, you're isolated from the main world so you don't have to worry about the Caliph suddenly kicking your door in, except stuff actually happens and you get some neat CBs. Buddhists and Jains also get to designate an heir so you can skip succession bullshit.

If you're still here, you need to restart a billion times until you get Venice or Genoa to not rival you or want to conquer your provinces. Take the "Recover Greece" mission day 1, start building galleons. You need about 6 of them to hold the Ottoman navy at bay. You will go into super debt to fight them too.

What you need to do is have good relations with Venice, get the +1 dip rep advisor and start improving relations with Venice from day 1. Otherwise, improve relations with Hungary, Poland and Austria, but DON'T ally them. You need to fight the Ottomans solo because they're just going to rape your ally and you want to bait them onto one specific province.

After you have 6 heavy ships it should be mid-late 1449. You want to declare on them before they start blobbing into Anatolia, ideally, since they will stick around much longer if they do, and they will recover from war much faster than you. Make your army as large as you can and your units as good as you can (if you can declare before Ottomans get level 4 mil, it's easier) and declare war. Leave your fleet docked but at full strength, you need to save sailors. Your army and navy should be stationed in Morea before you declare as well.

The important bit with staying friendly with Venice is that you can get military access to Euboea. Bait the Ottomans away from Constantinople toward Athens, then cross the strait to Euboea. DO NOT let the Ottoman army take Athens or you lose the game. The Ottoman army will follow you across the strait, and you should set your army to retreat back across. When they cross the strait, send your navy out to block it.

Hopefully your army didn't get stackwiped before you could retreat from Euboea. If it did get wiped, I hope you have enough money and manpower to build a new one and that you got ALL the Ottoman forces across, because even 1k units can take Athens and set them free.

Addendum: Venice declared war on me out of the blue doing this strat, and I took Euboea from them. Ended up not fighting Ottomans until 1455 or so, they stackwiped my army on Euboea. Had to build an entire new army and didn't emerge from debt until 1500 because of that setback. Maybe you can ally Venice but NOT call them to war, that might work better than just trying to get mil access.

You only need to fully control one side of the strait to block it, actually. They can't cross the Marmara if you have Edirne, I think, which is why the Euboea thing works, but if they take Athens they can cross regardless.
