Finally.
Burned through 4 Titanite Slabs trying to make a good weapon for this fight, then I picked up the Longsword that I used since the start of the game... second try.
Why does this always happen.
Same went for Sister Friede, I was struggling so hard trying to get her with many different weapons and killed her on second try when I went back to Old Wolf Curved Sword I had since Farron Keep.

Artorias set looks edgy but I'm fine with that since you need to beat Champ to access it.

Ringed K***ht is perhaps a step to the side from Wolf K***ht since you do have to beat Demon Prince in order to even encounter one, and accessing the DLC requires beating either Friede or Homoprinces.

I've been thinking about a really aggressive build that uses Hollow BSB with Frozen Weapon to inflict Frostbite and Bleed.

Would this work?

10 FAI cuz Izalith staff, 130 buff power

Tips and build ideas welcome, I want to try something special and strong

You're not considering the Slayer of Demons.
He can out-heal anyone in the series, and he has the same backstab and parry abilities as the Chosen Undead. And with the above points i made, he's by far the most likely winner.

Until you add the Hunter from BB. Then it becomes close, and it's up for debate.

I can't check it myself right now, but you mean visible from Gael's arena? Are they very high up or close to the ashen ground? Because if they're near the piles of ash wouldn't that mean they're much lower than they were in the regular game timeline, since originally both are piled up on top of other kingdoms / worlds that haven't yet been reduced to ash piles. If they're near the bottom of the world it means they're much lower than they were before, signing that Gael's arena takes place in the future.

Yes. Humans being beings of Dark is a central thing that has been going on through the series.

When the First Flame starts to fade it starts the "Undead Curse", which is in fact mankind returning to its true form. Probably weakens the Lord Souls as well since we've seen that Gods can also go Hollow, take for example the Nameless King. However despite undeath being the "true form" of mankind it's not necessarily a desirable one. After all, despite being immortal you still look like beef jerky and gradually lose your mind until you're nothing but a raving beast. Do not trust the Jewrpents.

The Ringed City is bigger and has a hard boss as well as a bunch of new cool weapons (get 'em before they're nerfed) and some good female outfits. I regret nothing.
