So I have a 11.2 New 3DS XL. Im reading all the documentation now but I still want to ask a few questions.

1. I want to be able to completely disable internet on my 3DS because I am a paranoid motherfucker.

SD card only needs to be 32gb but you can go bigger if you want.
Hard drive is up to you but remember bigger ones requires more power so you'd need a Y cable or external power. I'm using a 64gb thumb drive and that runs pretty well and there aren't many games I want anyway.

I'm not sure if this the right place to ask, but I'm getting kinda desperate.
I'm trying to install BotW on my second Wii U via WUP installer. It's a new one with a fresh USB drive.
Every time the installation stops at 131% on the first round and gives me an error code 0xFFE0FD82.
This perplexes me since everything works fine on my primary Wii U and I did everything the exact same way. Google doesn't give any usable result for this error code either.
I made sure that the USB drive is working correctly, so there should be no problems with it.

Any ideas?

You need to upload them to something like gmail or Dropbox's services and then pull them off one by one. Just remember that if you try uploading a picture and there's already one in the folder it will overwrite it due to having the same filename.

Go to Gmail or Dropbox in the browser when you want to take a screenshot.
Log in to your account.
Click whatever button needs to be clicked to upload it (Dropbox is the down arrow, Gmail has it as an option in a menu if I remember right, I use Dropbox)
Choose whatever screen you want to upload.
You need to go through the PC now and drag the file out so you can keep it.
Opening up the Internet Browser after that will stick it back to the same thing so you can upload quicker.

Again though, the max you can get out of this is 720p, you need to get a capture card for 1080p if a game can do it like Wind Waker.
