Open that esp in CK and see which slots it uses under Armor and Armor Addon.
Take the hat nif and one of the texture sheets and set them aside. Put them in whatever folder format you want for your mod then drop it in Data. Once you've decided on folder format, open the hat nif and redo your texture paths.

Now in CK go to Armor and right click any of the hats/helmets and click Edit.
Change the name and id, give them the same slots as the wizard hats.
Replace the World Model if the wizard hats came with one. That would be the _go or _gnd nif.
Ignore the Models box at the lower right for now.
Click Ok and it should ask if you want to make a new form because the id has changed, click yes.

Now go to Armor Addons and edit a hat. Change the name and id. Use the same slots that the wizard hat used. Armor and Armor Addon don't always use the exact same slots so watch for that. I'm not sure what difference it makes though. Click Select under Biped Model for male and select your hat mesh. Do the same for female. Ok and yes to make new form.

Now go back to the Armor form for your hat and in the Models box in the lower right, right click whatever is there and delete them. Then right click, New and select your hat's Armor Addon entry.

Now you're done unless you want to place it in the world. You can access the hat via Additemmenu or console at this point.

As for remaking the normalmaps, you can get a plugin for paintdotnet/gimp/photoshop that makes them for you, or use an online generator. Doesn't matter too much.

Okay so like I see the original mod and how it has everything doing things, but I'm still having trouble "finding" the "new" texture. You don't worry about the textures in ck. It loads them directly from the nif. Once you set the new texture paths in the nif, via nifskope, that's all you need to do. You don't have to bother with texturesets in CK.

Ignore that preview window, don't let it trick you into thinking you did something wrong. Anyone ever deal with character creation fatigue? I recently bought oblivion and must have made about a dozen characters and gone through the tutorial + a few hours and then stopped and made another character. I don't really do the main quest and I mostly just rummage around dungeons or join guilds or fight in the arena. Any tips on staving off fatigue and sticking to one character?

Yeah, I get it all the time.

What I do to combat it is have someone there while I'm making my character.
Then I'd feel foolish for having them assist somewhat in its creation and then playing a different character a day or two later.
Then again, I can only do this seeing as how I live with a friend, which may not apply to you.

Mmm I could probably do that with this one friend I know who plays Skyrim, maybe it'll be worth it to talk it out and maybe journal some adventures I have with a character. I sometimes have (what I think are) decent ideas for characters, but don't always know how to go from the start to their end. Like this one Dunmer named Tozia Vann who is super into the ayelids and magic, but kind of a wimp about getting hurt so he wears heavy armor and mostly summons creatures to do most of his fighting. Then he'd be a historian type of character and want to explore every ayelid dungeon and eventually get intrigued by the Daedra and get really wrapped up with them. So I'd come up with his skills, his sign and go to town for a few hours but then get bored and make up another.
