That is to say, with the Tsubame route, *the girl changes her fundamental personality with you based on how you act*. It's just one route though, but it had me wondering if there's a visual novel out there with say only 1/2 girls that have routes where they act very different in each one.

At the very least, they are treating it very differently now than when they wanted everyone to pretend it was an unrelated company with no relationship with Sekai.
They started putting effort into it last Summer, picking up Koikuma and announcing SakuSaku as R18 from the start and picking up someone to do PR for Denpasoft. They also made deals with Nutaku for several titles (most noticeably Chrono Clock) and picked up a number of nukige which they announced at a Denpasoft exclusive panel at the very end of the 2016 convention season.
The big question at the moment though is the status on their upcoming moege without a Denpasoft release announced.

Will and Dlanor both show respect for the goats that came up with theories, and mention how fun it is to battle out mysteries like this.

It's not that they missed the point of the story, it's that the point of the story changed when BB died. After R07 changed his mind about where he wanted to take the story, he dedicated the rest of it to insulting people that were interested in and actually engaged with the original premise, to deliver a, frankly, insane moral about love being willful ignorance from reality. That's why it's the people who actually followed Umineko as it came out tend to hate it way more than people who read it all in one go, because if you don't have that investment that comes from hundreds of hours thinking about and debating and trying to solve the mystery, you won't feel insulted when he tells everyone who thought the series was a mystery that they were wrong and their time was wasted.

I hate this meme, re-read the first few episodes, the themes in Chiru were brought up from the start.
R07's point in episode 8 was that the red truth couldnt really be used to define a person's feelings, so in the end, we have to be the ones to trust our own judgment on how we look at people. All of the Ushiromiyas did fucked up things, and they are the ones accountable for those things (and they reaped the consequences), but the story makes a big point showing how they could have atoned for it and made up for their mistakes.
And honestly, if you thought the series was a straightforward mystery by the time episode 3 rolled around, I don't know what to say. It was definitely not going to end like an average mystery story.

Pretty much have to talk to everybody you are able to reach at the time, every time the in-game time or plot moves forward at all in those games. Otherwise you are going to miss a shitload of stuff.

Mahoyo's translation has been on standby for years now, so unless you know japanese you won't be able to read it. You don't need to watch KnK before Fate since it happens in a different universe (albeit some characters appear in both) from Tsukihime and Fate, that aside the movies are a pretty fun watch.
I only played the MB games, didn't read the manga so I can't answer that.
Yeah, there's also the Backstreet Nightmare manga that started releasing last year but I don't know much about it or whether it's being translated or not.
