MH4U does a good job of helping ease players in while still being relatively up to date for the most part.

Usually the newest game in the series has the most QoL changes and weapons to use as well as having active online and so goes suggested for first-time players, but MHGen is set to get a re-release next year and right now its online is no more active than the game before it. Hunter arts and styles are also more for those with previous experience with the weapons.

MH3U lacks online unless you have a Wii U, but it's a good game as well. Even if you don't like underwater combat it's only confined to a handful of monsters.

You could bring a rare 1 weapon to a G-rank fight and not bounce as long as you hit the right hitzones, but you'll still do jack shit in terms of damage.

To be fair, Mind's Eye IS fairly useless. Not because the player should never make a mistake ever, but because of previously outlined reasons to do with hitzones.
Of course, that brings us to the problems with armour skills themselves, more specifically that there's a lot of fluff skills that are either worthless (such as HP skills, Defense skills and Mind's Eye) or so situational that you'll almost never use them over general offensive skills like Attack Up and Reckless Abandon.
Skills really need a rework. Less offensive, more supportive. Leave shit like Sharpness +1 in though.

on your first playthrough, sure.

But once you have the ability to play a game at G rank level (which does not really require that much actual skill) you are pretty much set for all future games. I have friends who play MH fairly casually, and I've seen it. They aren't completely oblivious to the deeper mechanics, but they just like to play and don't fuss too much over things. They just play and collect gear they like.

Not to mention you can stack defense and carry more healing items than you will ever really need. MH is not a super hardcore game, it's just not a baby game.

Problem with Frontier is that it faces the exact same issue of powercreep that every single MMO on the market faces. You start off with kinda neato monsters like Espinas that are still well within the bounds of the series, and due to the nature of powercreep you start seeing shit like Dhisufiroa, which is absolutely ridiculous.
On the other end of the power creep spectrum is Duremudira, which is so completely insane that it actually ends up being cool as hell. It's literally an ARPG superboss, rather than a traditional Monster Hunter "final boss". Plus, it uses the criminally-underused Ice element, and it uses it to deadly effect.
I've never played a single minute of Frontier.
