If we're going by the colortheory, i think, it's someone not connected to any of the colors. If Maki's the absolute truth, she can't lie. So that rules her out. We can see that it's blue instead of the iconics red. Why would they change something like that? I'm pretty sure it has a meaning. Especially for this game where colors seem to play a big roles.
It would also explain tue rainbow theme. We saw pink, red, yellow and blue used for the trial.
If the color of the cut-in is linked to a certain character then it might he like you said Kiibo or Shuuichi's.
I think it might be shuuichi because while he's the ultimate detective. He look like he get everything right by luck. Even his bio said so.

I think the biggest problem right now with the cut-ins are that they're missing Kaede's artwork. A game that's this close to release.

Agreed, Shuuichi's got everything going for him. Even though the trials represent him as blue, his character design is completely black. So it looks like he could change colors at any given time.
The hat, he probably left it with someone that died (Most likely Kaede since he seems to show affection towards her)
The car minigame's aesthetic, it wouldn't be lost with the color black.
Dunno about the luck talent though, how would he be able to listen to everyone during scrum debates? Maybe his talent isn't actually luck?

As you can see, in DR1/2 the cut-in was red. In DRV3 they changed it to Blue.
As you can see Kaede lack the art. It could be a random change but I do think that the color have a meaninf. Maybe to be closer to the "psycho-cool" but I also think it's to be linked to a character. Kiibo would be able to hear everything during scrub debate, his record function explain why he can "hear again" what the other student said and """"improved"""" gambit and braindive would be him learning/adapt... but it's true that it would be hard for Shuuichi gameplay wise.

An issue with Kaede dying, say, case 1 is that her dynamic with Maki is too perfect.

No not in terms of /u/, in terms of how the characters bounce off each other. Maki is an introvert who hates being social, Kaede is an extroverted leader type. Maki always tells the truth, while Kaede lies.

Seems like too good a dynamic to waste. Part of what made Hajime and Nagito's rivalry so much more enjoyable than Naegi vs Togami is that Hajime and Nagito were opposites like Kaede and Maki.

Hajime was a normie, Nagito was talented, Hajime was grounded, Nagito was off the walls.

Leon basically got stoned to death by super fast baseballs and Mondo was practically melted with his brain juices and veins exploding within his own head.
