So long as you know that autopilot is just for setting routes and never using to travel it doesn't take that long. I don't know t1 haulers anymore. If wreathe is the one that's for cargo and doesn't have some ammo hold or shit like that, you can repackage the thrasher and stick it in the hauler. If not, get the hauler that has a plain cargo hold and slap cargo extenders in the lows till you can carry 5k m3.

You'll want to live in null to rat and plex there. Honestly, if you've put your skills into mining then I'd recommend you stick with it. There are several mechanics in the game that would make that a very bad idea. Logi ships have to target friendly ships to rep them, so if they have both a friendly and an enemy targetted they could wind up shooting their fleetmates. And in Highsec it could lead to people accidentally getting Concorded. If you switch the rig to a medium ancillary current router you get to keep your plate, fit the medium booster and fit a small neut in the empty high slot. Exploration was the one way of making isk that kept me interested too. It's the random jackpot win mixed with the danger and need to keep on your toes because it's only worth doing in null and w-space, I think. I recommend moving to stain. It's npc nullsec so you can dock at the stations. DSS-EZ is the first station there after catch, iirc. You can auto link it and hop in a covops and move out. Just never warp gate to gate and invest time in making bookmarks on gates for getting your haul out safely.

Given I was siphoning 54 Tech an hour from this mining operation, and he was just pumping it directly into a silo on a basically naked tower, I'm guessing fuel needs are fairly low and a full bay can last for months. And with Technetium being ~3300 ISK each, and a single harvesting array gathering 100 an hour...

Granted, there's more money in better moons (R32/R64) or moons with reactions (Technetium/Platinum on the same moon, for example) but for a lowsec island with little to nothing in jump range of it, it seems like it'd be worth getting a group up and running to see what mischief can be pushed about with it. Especially with the new Industrial Complexes, and those dank lowsec rig bonuses...
