Best min/max is pick attributes you will be using and skills you won't. Leveling is based off 10 skillups of any of your chosen skills, and attribute bonii awarded for off-picked skillups. Basically, play as normal, then visit a trainer or level a skill you never use the hard way once your stat bonii are maxed for that level. Either that or play normally with an eye to getting good multipliers. Even poorly built characters get can get stupidly powerful in the late game if you know how to do it.
