The stats of a shield are completely irrelevant, right? I was under the impression their strength stat only is taken into account when using offensive shield abilities and that all shields are equally good at blocking/deflecting

The damage is based on the level of the pawn, if i'm not mistaken, so it should get stronger as you level.
Yeah it'll be annoying to go in the rift all of the time, but maybe those wandering pawns will get some use now.

Your pawns are going to die, you don't need them.

Just run in, stay out of his way for the scythe, do regular combos until the lantern starts to turn blue, then sprint away until RIGHT AFTER he uses the lantern (meaning you avoid the effects), run back in, do a couple more combos until he's about to swing his scythe, and sprint away.

Rinse and repeat until he's dead. Death's actually pretty easy considering he's a one trick pony.

I'm completely new to this game and would like to ask something regarding levelling and min/maxing:

Does it really make a difference in the end how I start my character?

I wanted to play as a Mystic Knight because I like the idea of playing a frost based knight character and I'm a huge fan of roleplaying characters. From what I've read so far, that would mean I'd ideally play the first 10 levels as a strider, then a few levels of mage, then strider again, 20 levels as mystic knight, more mage...

Is the only way to be a good Mystic Knight not to play one at all and spend most of my time playing a class I don't even want to play?

This is to the rest of your post too. You don't need to worry about that shit. Your gear will make up the grand majority of your stats (66% - 80% of your stats is from your gear).

It's literally impossible to fuck yourself unless you go like, 200 levels as Fighter/Warrior, and then try to play Sorc.

Go Mystic Knight and don't look back, you'll be fine.

Definitely one of the best fights in the game, just in the scenario alone. Griffon fights are pretty fun when you're early/mid-game.

The long journey to bluemoon, running across that broken bridge as your soldiers gradually die, the face-off at the top of the tower, and the surprise entrance from the magic man.

MKs are the Perfect Blocking class. It is entirely possible to have a back and forth PB fest with the Living Assholes. It doesn't help that, no offense, but Warriors are much slower compared to MKs.

Get Prescience, for starters.

When Matt 2 starts, start setting up 3 cannons. Chew MATK periapts; 4 of them, before you do. Start swinging, Perfect Block when he attacks. Get behind a pillar when the rift starts. Rinse and repeat until dead.

If you're going to play MK, you HAVE to master PB, there is just nothing else for it. That's why people consider them so broken, they're basically Dogma's version of Dissidia!Exdeath. The only things you cannot PB are grabs, Death's Scythe, and Matt's Rift trick. Everything else is fair game.

Holy shit, I just killed Daimon for the first time
I didn't have a lot of healing items with me and thought I was going to die, but he did some kind of portal attack and got staggered which allowed my pawns and I to chip away a couple of bars of his health

I got a sweet looking cape, some shitty armour a new sword for my pawn that I'll have to dragonforge. Since the Ur-Dragon is out of reach for me since I'm never online during the grace periods should I just enhance the equipment I want forged to three stars and farm the random dragons in Gransys?

I think you can hotkey some items as well, so that's pretty helpful.

Demon's souls isn't required to play Dark souls by any means, but it is a great game on it's own and has some pretty interesting differences from the other games.
