Traditionally Imperial male, I like being generic enough that it doesn't take much justification to imagine my character being all over Tamriel and getting caught up in all the various trouble your character gets into during TES games.

Nord Male is a close second and is certainly the one I keep coming back to in Skyrim. There's just so much of the game that feels slightly off when you're not playing a Nord in the frozen north.

As for races I NEVER play? Altmer. I just can't understand how anyone could play them without having massive lore-break. It's worse than it's ever been in Skyrim but even in other games they were pretty much all giant douche-bags bar-none.

I keep them installed, mainly to add new shit to the world and sometimes ill start a quest mod and come back to it later. Aswell some of my characters use assets from the mod.

Id recommend keeping them, uninstalling quest mods during a playthrough is a bad idea. Unless you got a save from before you installed them.

Smaller quest mods with neat dungeons and atmosphere but no real items are great to just play through, uninstall, and revert to an older save.

The bigger dlc-sized ones are good for an entire character playthrough, but pick only a few. Ideally though, you should have a fair balance of new locations and junk for the vanilla game and treat the dlc-sized quest mods just as that, dlc. Keep them in your load order.

SoS is stable, I have it installed in my normal game and never ran into any stability issues related to said mod. Only issue I sometimes get is the underwear it adds clipping through new armor. Have to restart SoS to fix it.

Can't attest for the others though, I just use vanilla sexlab.

There's Civil War Overhaul which adds races, but it also weirdly adds some to Stormcloaks.

I saw the Stormcloaks had these Orcish Berserkers, Argonian assassins, and the Legion had some High Elven mages. There were also regular Imperial and Nord mages. Plus Giants for the Stormcloaks.
