It was just once, that's the barrel damage (parrley damage that chains on first barrel, that damage the second one and so on) that you're seeing alongside champion damage.
Setting up triple barrels was easier than usual because they had no reliable initiation. GP is my favorite champion to carry, by far.

he shits damage at all stages of the game and has immense utility at the same time. he really starts coming online after first item ghostblade and the others you mentioned only start coming online after 2-3 items. he has a decent way to start fights and make picks from long range with his w and ult so you can actually be useful as an adc. the others you mentioned don't have any way to be useful outside of shitting damage in late game fights and taking turrets which jhin also does.
