Chinatown Wars had the right idea for drug deals. There was a changing market, and certain dealers preferred to buy and sell certain things. Sometimes there would be a map-wide shortage or surplus, which gave an incentive for dealing in specific things/people at one time. Making deals carried the risk of a wanted level. Getting busted while carrying drugs was bad news, but you could store them in your safehouses. While driving around, you could find and steal drug vans as a free commodity. They could easily expand on that in GTA:O, and it would give people something more varied to do.

If more than one of the Mansex club are riding within a distance of each other on bikes, they go faster and are tougher/heal or something. A few months ago I started playing again and was interested in joining a MC crew. Then I found out it was apparently this gigantic deal in GTA:O, which I thought at first would be a good thing.

But most of it is full of autistic fucks. Like people who watched four episodes of Sons of Anarchy and chose their fresh new monthly interest. I almost joined but left during the 'initiation ceremony' because their rules were gay as shit, and as soon as I said 'Yeah im not interested anymore' like four of them legitimately freaked out screaming shit like YOU SHOULD BE HONORED TO EVEN BE CONSIDERED TO JOIN THE BIGGEST BROTHERHOOD IN GTA. And their leaders name was like LORD_GOD_KING or something like that, unironically.

MC's get bonuses to their stats by how many are rolling together. 6 guys rolling in a clump would usually be an easy kill for an RPG, but MC riders might be able to drive away from a rocket or two if they get lucky and don't break formation.

I'm not saying we all have to go play GTA 1 and 2 online to have a better experience than what's in GTA:O. They were different and are probably too outdated now. But at the very least, they should be considered in the list of multiplayer options for the series, even if they stay at or near the bottom. They're around the middle for me because I played them when they were relevant, but that's my own biased opinion.

A part of me would rather see the major focus in GTA games to be on the single player. If you look at GTA 4, it had a functional online option, but the game and its DLC were mostly focused on the story and missions. GTA:O has taken the focus away from the main game, and I believe it's the reason why there hasn't been any addition to single player in three years. It's not so much about removing progression, but building a game that people want to play aside from trying to unlock or buy something. There are online games people play without unlocks and cash systems as a hook.

You might have more motivation to play with friends, but a very large majority of people only played Drop Zone and parachuting this week because of the cash bonus. It's practically impossible to get a full lobby for something like Sumo or Slasher without organizing it first.

By magnitude, do you mean the size of the game, the gameplay options, or the number of regular players? For size, the Arma series and DayZ have large maps and dedicated fans. For the number of players, Minecraft and vanilla TF2/TFC were extremely popular. Multiplayer mods for San Andreas and Just Cause 2 received a lot of attention, for games in the same genre. You're right that it's not a common option for games these days, because of how valuable an unlock/cash system can be for the long-term interest and profit in an online game. Can you imagine how much money could've been made if Minecraft had had a cash shop?

I forgot about vanilla CounterStrike. But notice how they've added cash shops to many of these games, even though they were popular before without any cash or time investment. DayZ started out as a free mod, then was converted to a standalone with a price tag. Copycats made their own cheap versions of that theme, and many added cash shops. It's the way things are now, but that doesn't mean it adds value to an online game. It helps them to survive, but that's what expansion packs used to do.
