Because of that, it's not really possible to determine HP values at all, since the numbers shown for what you do don't cut off at the end of a monsters HP, For example: A monster with 16 HP takes 20 damage. The same applies to sans on a MUCH more extreme level, given that the only time you actually hit him, you do a fucking ridiculous amount of damage.

What the game shows you is canon, anon. What the game doesn't show you, such as unused sprites or data values that are never shown to you, are not.
For example, the datamined stats have Asgore at -30 DEF. While this may be true from a mechanical perspective, that's not the DEF shown when you choose CHECK during his fight.

I'm done recording my Undertale Let's Play. Quite honestly cried while recording the last part, there were some sad moments there. Omega Flowey gives you a different checkpoint in each SOUL section, and you literally can't die during any of them, plus they each give you a full/near-full heal if you do them properly, not to mention all his attacks do percentage-based damage, meaning that it takes more hits to kill you the lower your health is. You also can't die during the last part, I don't think.

Also, you literally cannot die to Asriel. That's the whole gimmick with his fight. It's more of a cutscene than a fight.

No, you can't. Go back and play them again. When you're in the parts where the SOULs are on OF's screen and the ACT button appears late in the pattern, your HP will NEVER hit 0. You cannot die at ALL during them.

Undyne and Sans's fights are challenging at best. Asgore's fight is only challenging if you don't use either of the methods to lower his DEF. Mettaton's is pretty tricky, though. That was my favorite fight in the game.
