Buy level 50 omniset and respective tools, shouldn't be too expensive.
Start moogle questlines and get every single class to lv 51, you get a huge boost on what each skill does at 51.
Blow up leves if you have any remaining, remember you need to gear yourself so weaver/ltw are a priority to craft your own gear as you go.
Collectibles once you run out of leves.

No, but it seems like there's at least a couple. Most people in the thread are on Balmung, but you pretty much have to pay for a transfer to get in there. Some on Gilgamesh also, which supposedly does open for new characters sometimes but it's often locked. There's a smaller number of people on Excalibur and a couple of the EU realms and Tonberry

Most people are on Balmung, since it's the highest populated server in the game. It will require paying the $18 transfer fee to get in since it's always full outside of the 30 second window after maintanence

There is some presence on Gilgamesh and Excalibur as well, and those two are generally more forgiving when it comes to making new characters, even then you will still have to try at off hours during the night.
