So far the most interactive gameplay I've experienced was tanking. I mean, without going AFK with your finger or a weight on the C key.
Timing C blocks with boss/mob attacks, dealing damage and applying debuffs in windows of opportunity, managing your short duration buffs, trying to not move mobs around so that they take full damage from your party's ground DoTs. No healer runs for added challenge.

It's no heroic raid MT, but it's more fun that smashing your face on the keyboard (i.e.: average archer gameplay).

Then take cata1 instead of hop2, since they buffed earth wave months ago it now deals full amount of hits since level 1 so that is another multihit you will have which is also strike and you will have less struggle dealing with mobs that are strong to pierce. You can also use 2h spears like galin trident, elements and catacombs pike, so you don't have to worry about increasing you patk at higher levels.

Finestra level 10 is good for the uptime, but it is almost a waste if you have nothing to use it with, which you won't since you are going full squire after that.

Get Hoplite, Finestra gives you increased block like High Guard AND crit rate.

The issue with wugu is not that the class is shit, it's that their poison debuffs which make up a significant part of their damage are bugged. Your poisons can be overwritten by any other wugu attacking the same boss. Also the poison damage is not included in your personal damage contribution on world bosses so unless you're in a small group you're not likely to get a cube.

If these don't bother you then go for it.
