Well IIRC the PC's aging is all screwed up because they were out of the universe for a little bit. Baby shouldn't have this issue so the baby should grow up normal. As for personality either it could be RNG with a little bit of PC input (if you always acquiesce when they throw a fit they could end up spoiled etc.) or just pure RNG (so you could end up with all tsundere kids if you're lucky/unlucky enough).
And then I don't know about everyone else but I'd imagine once the kids hit adulthood they'd probably want to head out into the world on their own and they'd send you little letters every once in a while like "Dear Mom/Dad, I defeated a really bad guy today! Yes, that's exactly what I meant. Maybe there could be things like baby traits. Let's say it takes traits from the PC and assigns random stuff to the kid based on that. So for instance, somebody with spiral shaped pupils could have their daughter/son get that, or heart shaped or star shaped pupils. Three points of randomization, in other words. It's a little wonky but I'm sure it could work with some finetuning. Plus maybe a few key traits of the mom/dad NPC like having an animal tail or something.

Then things like a personality list (could just grab from the standard bag of -deres and have generic scenes that play off of that personality, like the tsundere kid making soup for the PC and insisting it wasn't for them or a-anything) and a chart system for their growing up. Let's say for now it depended on whether the PC wants to raise them themselves or send them off to some remote academy to live out their childhood for. The latter would be automated but you could get the kid back in adequate shape.

Having them at home would have more risk (or just looking up a guide), but with more kid scenes and a greater chance of success. Success here meaning that they would be greater assets to your army or have a chance of finding/making more gold for you or something. Maybe in either case there could be a chance of a random event that would help age up the kid so you could get to your desired age range as soon as possible. This system could even include a 'from birth to death' age range, so kids (depending on species flags they were given) could die of old age or disease or fire or any other multitude of things.

Like the other anon, I envision elemental girls as being made of their element. Earth elementals are muddy slimes or rock-hard golem like creatures.
