Welp, I have some questions in regards to the BG series. Does the canon party in BG1 get the most interactions and what not? And how would you describe each romance in BG2?

BG1 does not have a lot of character interaction. Sometimes party members bicker or volunteer their opinion on things. And they may leave if your reputation becomes unacceptable to them, but otherwise they are more like henchmen. I don't think it's really any different in this regard for the "canon" party than it is if you rolled with all evil characters.

As far as BG2 romances go, Aerie is the easiest one to do and she is the typical "good-aligned" romance. Just be ready for tons and tons of "muh wings". Viconia is the evil romance, though you can do it at higher alignments too. It is more difficult than Aerie and requires some careful dialogue choices at a few key moments. I've never done Jaheira's but from what I understand it also is more difficult than Aerie's.

If you mean BG1, no followers really interact with anything, Imoen especially so. Some of them have occasional lines to each other if you stand idle for a bit, like Safiya hitting on Coran, but it's hard to call those proper conversations. EE companions have some banters with each other, but they're pure garbage all around.
In BG2, Jaheira and Viconia have the most banters and random conversations, but only if you romance them. Jan Jansen also never shuts up, while Minsc doesn't even have a personal quest and Imoen has little content with other followers because bioware intended to kill her off up until the release.

Without going too far into spoilers....
Anomen - extremely self righteous and full of himself, has daddy issues. Probably calls you m'lady at some point during his romance, can't remember it, but he's basically really arrogant and tries to be chivalrous. You can also screw up his quest and make him go on a murderous rampage, but that probably ends the romance. His romance has by far the least material of them all.
Aerie - really insecure, needs a lot of emotional support throughout her romance, dumps you if you offer sex to her. Can cuck you with Haer'Dalis if you act too "aggressive" when their love triangle starts. Has the shortest romance of the girls and no real bad endings.
Jaheira - first part of the romance is about her dealing with her loss of Khalid by being really bitchy, but she comes to the conclusion that he wouldn't mind if you banged hero pretty fast. The romance itself is really long though and tied to her personal Harper shit.
Viconia - she's really lewd and mean, like Morrigan on steroids. Like insults your performance after your first night together mean. She's got a lot of trust issues and so on and so forth and it's really easy to screw up the romance. It's pretty fun though for the hot and cold aspect.
