I can't offer much help for Ryu, but for Mega Man if you're going to do beat plane like that you need to go to the far side of the screen and keep shooting. It makes it a lot less punishable.

For Hulk you should be doing LK MK after cr.hp, sj.LP, sj.lk, sj.mp in the corner, because you can keep a combo going afterwards, or jump and reset with air throw. The problem with that is a lot of people already know of that reset.
Gamma Crush isn't safe on block and you should only do it raw if you're going to chip out.

He can combo into his hit grab with a cr.Mk, and from that if you're in the corner you can do j.HK and combo off it.

I'm guessing Capcom thought that with how the damage output it right now along with the way combos were working in beta 1 it would have gotten out of hand and they didn't want people who played the beta to have a huge advantage over the regular consumer. I voted for MSH, I really hate how assists work in MVC1. I hate how they're limited, and how you don't have to worry about their health like you would in 2.
I don't think many people are going to use Jugg assists, because it's limited to 3 uses.
The most used assists are psylocke, colossus and Lou. There's a couple other useable ones like Saki I think? Whichever one is the one that shoots diagonally and horizontally. And I've heard of people using Thor.

You can hold different button combinations to get the one you want. And I think that's the only way to get the secret assist Sentinel.

The most common ones used are

You can hold that an input/code, like Psylocke's is start + mk, and that'll automatically select the assist. Otherwise it'll just quickly cycle through the roster and choose one at random. I think you can also just hit a button and it'll stop on whatever it was cycling through but I'm not sure.

It's such a goofy design philosophy, forcing you to either play with a random character or know a secret unique code (in which case what's the point of having it be random at all if you can still choose them) for over 20 assist options. I don't get it, but then again this is the same game that makes you learn the fucking bible in braille so you can play Red Venom.

He gained the ability to special cancel his cr.mk, but he got tons of nerfs. His Psycho Inferno is terrible now, his Scissor Kicks are now unsafe on block and can't be cancelled into CA. His new regular dash seems like a buff visually but it's actually a nerf, longer recovery and can't cross the opponent. There are other nerfs I don't remember at the moment, he has been really fucked by Capcom.

She is generally considered low tier, in general people agree her, Miyako and Mech are considered the worst but don't let that stop you if you like her.

F-Ries is considered the best and she's also an easy beginner character since she has the highest damge per hit ratio in the game and can do 4-5k easily with 4 button presses and she can play very basic with pokes etc and still do decent.

There is no such thing as a dropped combo, just a happy little reset :)
