Do you mean for bombing, or for a jump map?
If it's the latter, you have to be moving faster than the rocket and then fire. If you're falling down, such as on a jump map, look up to see when the rocket will hit you. You could watch some videos of jump maps to help you understand the timing better.
Bombing is the same thing, kind of. Just gotta learn how to time it better since you can't look up and you're moving in an arc instead of falling down.

Pyro is still free crits, although the other flare guns are viable now, along with Powerjack being melee of choice. It gives you speed now.
All of Soldier's backpacks are viable and good, they charge quicker and Conch and Backup have passive effects now (+2 health per sec and +20 health respectively)
Equalizer is not the Equalizer, the fast-running pickaxe known as Escape Plan has been nerfed a million times but is still melee of choice. Market Gardener has received exactly zero buffs but still becomes more and more popular, blame Youtube and memes.
Soldier also has a parachute that lets you float in the air, equippable by Demo too. Pair it with Air Strike (which lets you get up to 8 rockets loaded and fire them as fast as you want while rocket jumping) to shit on people.
Cow Mangler became good and then people forgot about it. Liberty Launcher is still pretty bad but different idk? And Black Box got changed so it's not as aids to fire a single rocket into a cluster.
Scout is pretty much the same, I believe? Shortstop has had a few changes and Crit-a-Cola is godly. Winger gives you extra jump height, Pocket Pistol was good but is now bad. There was a new weapon released that is kinda cool it gives you minicrits when you hit people from behind but it sucks.
Demoman has a shield that is complete and utter cancer, it lets you charge around, turn freely, kill someone, refill the charge and charge again get free crits and hhhhhh
Demoknight in general has become a pretty solid thing.
The Loose Cannon (cannonball gun released in 2012) was shit but is pretty good now people hate it and you can get """""double donk's""""" for good meme value. Pretty satisfying.

Heavy is pretty trash, Tomislav got nerfed to the ground, recently got a little buff but not much. All his miniguns require to shoot for like a second to deal normal damage. Sandvich can't be dropped for a healthkit for yourself, only teammates. They've tried to make other secondaries balanced but it doesn't work.
Engineer has a "Rescue Ranger" which lets you shoot at your buildings to heal them, or pull your buildings away to you. Very cool gun, people hate it.
You missed the Short Circuit-pocalypse.
Wrangler has received nerf upon nerf upon nerf but is still the best option.
Jag became VERY good recently, basically letting you build sentries at Gunslinger speed, and minisentries are a lot weaker now.
They've tried to balance the Eureka Effect but it's a dead horse.
Medic is much the same except the "new" Vaccinator which lets you give people resistances. It's such a clusterfuck of stats I can't even describe it.
Sniper, yes, Cozy Camper is good, in addition Darwin's Danger Shield is too good, and banned everywhere, since it lets you tank a headshot. And right, while we're here, Polycount sets are history.
Bazaar Bargain is now incredibly good as you don't lose heads on a miss/bodyshot.
Spy has gotten a bunch of changes to his watches, for example the Dead Ringer is more suited for getaways than just eating bullets and rockets, not much to write home about, really. Dr. Enforcicle is not as balls as it used to be, I suppose.

Nobody likes having their movement fucked with, but without airblast Pyro has nothing going for him. Airblast is fundamentally broken, but because it's limited to a shitty class it's considered acceptable.
Nobody likes being instantly killed by a Flare crit or Reserve Shooter minicrit, but without combos the Pyro can't deal enough damage to be taken seriously. Nobody likes instant kills in general, but classes like Sniper and Spy have to actually work for those instant kills (whereas Pyro combos are "easier" since you can just stunlock your opponent with an airblast) so it's seen as more fair in the eyes of the average player.
Either of these require that the Pyro is able to close in on their target, but he lacks the tools to do so unlike Scout (who can do everything that Pyro can do, but better) or Spy. You'll notice that everyone who complains about Pyros does so on a pub, where there's zero communication. You're not going to see Pyro run in 6s often because he can't do anything in 6s (except for a few maps where he can defend last pretty well, like on Gullywash).
So to make it short, people die to Pyros a lot because they're not communicating and being aware of their surroundings, which isn't to be expected on a pub. People also hate Pyro because of how fucking awful of a class it is (you could remove Pyro with zero repercussions) and the awful degenerates that tend to be attracted to him (furries, traps, weeaboos, horse show enthusiasts, women)
I don't particularly agree with any of these except that Pyro is a bad and badly designed class, I'm just explaining why people complain about him so often.

And the big reason pyro needs airblast is because the flamethrower sucks as a weapon and afterburn sucks as a class mechanic. Flame particle mechanics make the damage output way too inconsistent and afterburn feels like it was balanced around no medic pubs. There's gotta be a way to skill index afterburn in an intuitive and not complex way.
