It seems likely that they were going with Sakurai's take on the anime, as his rule on no humans was probably spread through most of the games afterwards.
Certainly it doesn't explain her absences now. We know that rule no longer applies as she keeps making cameos, but for my money that only goes to show how glaring her current absences are.
I suspect the new director's preferences are what's causing this problem right now. After all, he created Drawcia.
The best thing to do right now is wait for the next game. I'm running out of patience, though.

Actually, Sakurai and Shimomura were lovers.
And Shimomura was 12 when Sakurai started letting him working on Kirby with him. Sakurai is a notorious shotacon. Even let the little guy direct his own games.
But Sakurai started getting territorial of the series when he got the anime deal, and Shimomura was getting older, so Sakurai kicked him to the curb.
Shimomura killed himself soon after. Stricken with grief, Sakurai credited Shimomura as director of the latest GBA game, left the company, and vowed to never work directly on a Kirby game as long as he can help it.
HAL is reluctant to use Shimomura's ideas out of shame, but due to fan demand they have been making small cameos.

She is Shimomura's Meta Knight. Designed and developed to be a unique and intriguing boss rising to main character status, occupying her their niche, and it seems Adeleine stuck in the minds of those who paid attention to her in DL3 and K64. She was set up, developed, but then she was gone, while Meta knight was set up, developed, and became a mainstay. The fact that she stopped appearing only makes her more mysterious, and I think leaving her out of Air Ride and other games from the time was a mistake. But it's understandable, since the creator left, there was no driving force to push the character, while the other director made sure Meta Knight would endure by sticking him in his anime and Air Ride.
You have no idea how much demand there was for Meta Knight back in the day, when people though he was gone, and Super Star was the one-off style. From Kirby 3 to Kirby 64 fans were absolutely clamoring for him. I was one of the guys hyped to see him return for Air Ride, but I also expected Adeleine to return too, since it only came out a couple years after 64. I doubt she'll ever be the main character Shimomura obviously wanted her to be, but even if she reappeared as a recurring side character that would still be a victory for his legacy and those who enjoyed his direction. On that note it's looking like Kumazaki has a "Meta Knight" too, someone who seems like their favorite who really shows how their style is, in the form of Magolor. I like him as well, and I'm glad he's not dead.
