DQ is a by-the-books JRPG series. The stories are all fairly generic, but well written. It's not groundbreaking or game changing by any means, but it's always comfy and enjoyable.

The games are largely independent from one another, with two trilogies existing (1,2,3 and 4,5,6).
If you want to try it out, it's recommended to start with III or V, you can try VIII but being one of the later ones it might ruin the older games for you.
