One of my biggest issues with games post-p3 is that the persona evolutions and skill sets depend solely on the protagonist.
With P3 SEES was a group of people with their own individual personalities, desires and skills, they could find their goals and push themselves towards them with a bit of help from everyone, not just the protag.

Yeah I was also slightly disappointed because all the S.Link shit is missed out on, which was still touched on in P4 and tied into the final episode. Whereas in P3 movies no social links are touched on and their element is ignored in the ending unlike it is in the game.

Persona 3 onward are fairly simple JRPGs but they are extremely story and dialogue heavy. If you think you can handle that, Persona 5 is the nicest games to newcomers, but that means going back to player the older ones will be harder and harder. I recommend starting with 3 or 4

P4 no way is it a 10/10. Character development was limited to S.Links and combat was too damn simple.

P3 maybe for a specific type of JRPG fan, but for most people probably not.

P5, I'll admit, is the best persona overall and oozes style but the combat is still too easy. I've been playing on hard for my first run and I'm still considering moving it up to maniac because I'm still steamrolling everything but bosses and the occasional enemy that gets lucky.

This is true of the other ones too, things are constantly happening relative to the main plot in 5 whereas in 3 nothing substantial happens until the Hanged Man fight which is at the end of November. If you don't think 3's pacing is awful then I don't know what to tell you.

Also not sure what difficulty has to do with the quality of the game, Nocturne and SJ are more difficult than all three but I don't think you can call them better games on that merit alone.

More or less, the pacing in it is good as it follows similar pacing to the games with Dungeon > S.Link Shit > Dungeon > Field Trip/Festival shit > Dungeon etc. It incorporates every S.Link (I think, can't remember. At least all the important ones) though at times some of them feel out of place to the overall plot and like a filler episode though I guess it's acceptable given that is more or less their premise in the games.

The relationship with Maya in the P2 duology is less cringey because it's more like a conventional romance between actual characters. P3-P5 has an involved series of side quests where you're expected to self-insert with the painfully saccharine and/or blunt shit those side quests entail.
