As for story, it's like Final Fantasy where each game is isolated (for the most part). 1-3, 4-6 are trilogies in that they take place in the same world, but they aren't direct sequels. The NES games don't have massive stories.

No. It doesn't work like that. I work in translation, and this is how it goes:
Company sends the complete text to a translation agency. The agency contracts translators like me for the project (not many, because God forbid actually spending money, and getting things done this century). One of us can - at best - translate 2k words in one workday (8 hrs). And then there are glossaries sent out by the video game company that forbid you from translating specific things. I worked on Nike projects before, and I found it hilarious, that you had to keep calling their sales reps "Athletes" in whatever language you translated into. Also, here's the best Nike line I've ever read: "Remember, inside every employee is a person." Nike glossaries are full of this shit that you mustn't translate.
I never worked on vidya translation, but a longer novel can easily be 500k words, btw.

DQ8 is definitely the most entry friendly.
It's 100% completely standalone while also having more mainstream appeal.

People will tell you to play DQ5, but it's part of so called Zenithia Trilogy, with DQ4, DQ5 and DQ6 all happening in the same world but centuries apart and there's callbacks in each one) and it's also more classic SNES JRPG styled which has less mainstream appeal than DQ8.

Frankly start with DQ8, then move on to Zenithia Trilogy. Just play the iOS/Android verison of DQ4 (and only DQ4) if possible since the DS version removed all of Party Talk (party/companion dialogues, aka all the flavour and personality text for your party) in the translation due to rushed schedule and lack of resources. They actually added those back in the iOS/Android ports (which are based on the DS version).

For DQ8 you can't go wrong with either PS2 or 3DS, but if you go with 3DS I recommend pirating the Orchestral version.

Just think how long it takes to develop, say, a visual novel that has a script already written out. 5 and 8 are both fantastic, but any game in the series is fine to start with, aside from 7 (the longest game and super grindy). I'd only play 1, 2 and 3 if you've played FF1, 2, or 3, since they're quite old school. If you do decide to play them, play the SNES versions.

The series isn't really a multiplayer thing aside from 9 and 10 (which is a Jap MMO that is a pain in the arse to get running and is obviously only in Japanese).
