So the argument I've seen is that this is a hedge against currency risk.....which MIGHT be true.

Way it works is like this:

Actually I forgot one scenario - if the pound depreciates then it becomes cheaper for them to pay off the loan by converting USD to GBP ($1 will be worth more in terms of GBP). So this is kind of a hedge - worst case is they eat the interest rate in GBP because the pound appreciates and they wouldn't want to convert USD. Best case is the pound depreciates and paying the loan back becomes (relatively) cheap.
