So, I'm gonna come clean and admit that I've never played any Metal Gear game ever. I genuinely want to start playing the series but is there an actual point if i've been spoiled literally every single aspect of the games by /v/ over the years? I even know about the protag of the last game being a clone.
It feels like I missed out a huge chunk of really interesting games with a good plot, but is it really worth playing if I already know the plot essentially?

I'd say, start playing it from the beginning if you can, in chronological order (you can skip the msx ones since Solid retconed pretty much everything important) and try to avoid MGS threads if you care for spoilers.
I enjoyed the games even with most twists spoiled to me by friends, so maybe there's a chance you can too.

Yeah, they're still very much worth playing. The games are still (mostly) fantastic even if you already know all the everything. If you play them, play them in release order. Excluding the original MSX Metal Gear games like >>379581817 said.
To give another perspective to why you could enjoy the games. This is very personal, but I'm a sucker for control mastery.
If a games plays in a particular way, learning how it plays is at least a quarter of the experience and half the challenge.
MGS 1 to Peace Walker had a bit of this. They way they play is completely unconventional for modern standards, most of the important reflex actions are made with button combinations or holding down buttons while you do it.
This means that the more you play, the more you learn how it plays, and the more polished your play style will be.
Once you learn the AI tricks, you can find more ways to improvise and refine the way you play, and that's a beauty this game offers.
MGS4 and Peace Walker are the most watered down due to more standarized controls, but they still have their own quirks that are fun to learn.
MGS GZ and TPP on the other hand, while mechanically great, it uses your by now standarized TPS controller from Gears of War to GTA V, which is good to bring more people into the fray, but the game suffers from not being fresh enough past the few hours, and it feels.
Feels like pure autism, but trust me when I tell you that if you enjoy mastering controls, you'll miss it a lot when playing GZ and TPP.
Other than that, it's a good series.

I'd rather take Freelancer, mash it with the vast space of Elite, add landable planets, station building like in X series.
Bonus, if its an mmo, add the ability to make a guild / faction, ability to control star systems and manage them, build AI fleets to assist your own player fleet. Basically a 4x added into a first person space sim.
