Asshai was the former Capital of the Empire of the Dawn they were the precursor of the Valyrians and First Men. The empire covered most of Essos and had colonies all the way to Westeros.

Eventually an Emperor who was part of the Star Cult performed profane rights to their Elder Gods (and honestly considering the references that GRRM puts I would not rule out it be actual Lovecraft shit) which led to a meteor hitting the moon during a solar eclipse.

This caused a lot of bad magical shit to happen and became known as the Long Night. The Others as they came to be known were the snow knights of the Children which they created to kill men because men caused the meteor incident, but unlike the show in the books the Others built up their own civilization while they were busy raping and killing everything.

The reason the Oath of the Nights Watch says "Walls" is because the 5 forts are considered a wall as well.
