Niche anime about a kid whose life gets turned around when he meets a musician and it's about their band and struggles for popularity... but it even got a live action movie that is alright. Animation isn't great but it has a nice feel to it. Also has some pretty good music

Shigurui, which was a good take on the samurai genre that glorifies violence. Basically a horror anime with sword fighters as the monsters.

Kids on the Slope. It's kids and jazz. And Christianity. A coming of age story about an odd couple of friends that both love jazz. I didn't think I would like it from the premise but it just grew on me very quickly. Also has a great ending, in my opinion. It felt like a real story.

Gundam Thunderbolt. This one's sort of a hard sell if you aren't into the Gundam franchise, but I think that it stands alone extremely well despite it being a side story to one of the biggest continuities in the series. Thunderbolt's got the old, grim science fiction feel that anime used to have in the 80's, where people just got gibbed in the hard vacuum of space, but it's also got a great soundtrack and some really, really great animation. Some of the cinematography and perspective work is also really good.

Space Dandy, as already mentioned in the thread. It's a weirdly accessible absurdist comedy that operates on a few different levels. Also a great soundtrack.

I actually think having an outstanding soundtrack is crucial for the anime itself being good, too. Whether it's ambient sounds (Shigurui has a lot) or music.
