Yeah, they're an Arena-era D&D leftover, but there's some lore about them.
Orcs are commonly held to be related to goblins (both being Goblin-Ken).
The Altmer keep large amounts of Goblin slaves, as do the Tsaesci (probably not the same breed of Goblin).
There was a Goblin Necromancer serving the Underking in Arena.
Goblins, led by the god Malooc, feature in Redguard history, but it was probably Orcs.
Goblins are among the Goblin-Ken that lived in the early versions of Orsinium, though this has apparently stopped being the case by Gortwog's time.
Goblins sometimes train Durzogs.

Also, goblins were going to be put in Skyrim, but that was cancelled and the models were used for Rieklings, probably because they would occupy the same "ecological" niche as the Falmer.
The Falmer are far more interesting anyway with their origins as a sophisticated civilization, their armor, the architecture and the both scary and tragic aspectc of their existence.

I'm not one those "TES weirdness" fetishists but Goblins are generic as hell and might as well not even exist at this point in TES.

They're basically shorter ashlanders. Each tribe have their own costumes and traditions, examples being how a leader is chosen where among some it's by killing the former leader while other legitimize their rule by having some sort of artefact of cultural importance. They seem to pop up all over Tamriel.

I agree in part about goblins, they can be pretty stock and boring, but goblins seems a strange starting point for taking on cliché.

Personally, I think the Dawnguard DLC, particularly the Vampires in it, are the worst, most generic thing in Skyrim, and maybe in all of TES.

It boils down to his depiction in texts (for example consistently being called "bull-man" in the Song of Pelican), his role as a "human" deity, the nature of his son, his association with the Lord's Mail, and so on. I don't think MK ever drew Morihaus, but (he drew Belharza twice), but I know he likes humanoid depictions of Morihaus, if that matters to you.
Now, he was probably more bull than a minotaur, but not a bull outright.

He's actually only ever called a "man-bull" once in the Song (Pelican? Is he a friend of the Ada Mantis?). Every other time, in the Song or the Adabal-a, he's consistently referred to as "a bull" or "the bull." I don't think, or rather, don't know, that MK was implying anything there, though.

When it comes to his son and the rest of the minotaurs, doesn't it make sense that a bull + a human = a minotaur?

Mehrunes' Razor wasn't made for Mehrunes, likewise Morihaus didn't craft the Lord's Mail.
But this is besides my point anyways. Morihaus is a spirit, a mythical figure, saying he has a true specified form is just wrong. There are people who will depict Morihaus as a bull, a man, or a minotaur.

Sithis is something that is fairly hard to truly explain.
I'll start with the history of how Sithis came into being as a concept, which it is.
So basically for fucking ages the Altmer have been really confused about the existence of Time, and likewise, the existence of the world that has come out of time. As they understood it, Time, the beginning, was a direct emanation of Anu, the singular concept of everything, but this didn't make sense because Anu doesn't do anything other than be. So these Altmer came to the conclusion that the inconceivable creation of Time was in fact a reaction to an equally inconceivable action brought about from Padomay, or Nothing which holds the chaotic potential of everything (Everything is only capable of nothing, and Nothing holds the possibility of everything; you start to see why its called the Enantiomorph). This action was named PSJJJJ.
From the grander concept of PSJJJJ which is in itself, Padomay, is derived Psijii (which will eventually be corrupted into "Sithis"). Psijii, as can be seemingly concluded from the Altmeri Creation Myth, is a less broad idea of PSJJJJ.

The sect would develop into the Morag Tong.

The only thing I would say that I am specifically making an assumption is when I'm explaining specifically what "Psijii" is (though not the part where Psijii is in direct relation to the idea of Sithis). I came to my conclusion on Psijii, by relating what we know of PSJJJJ to what the Altmeri state about 'Sithis' in their creation myth (this should go without saying but the concept of Psijii was created by the early Psijic monks).
The Monomyth also states in its intro that "Sithis is the Corrupting Inexpressible Action" which is likely a more Psijic view on the concept.

Just played through the Morag Tong in Morrowind.
I see that the Dark Brotherhood in Vvardenfel (NOT Morrowind in general) are very attached to Mehrunes Dagon; Ald Sotha is a big deal shrine to MD, and the special duties all send you to one shrine or another with a big statue of MD.
So, is this a pre-Oblivion conceit? I mean, OB standardized the DB in regards to lore, this is proven by Skyrim's adherence to precedents and lore set by OB.

Are these DB members actually the Mythic Dawn working under the name of the Dark Brotherhood for some reason?
The Imperial woman in Ald Sotha has the title of Night Mother. So, is this another pre-Oblivion conceit or can the Night Mother be a living person? I would assume her actual role would be more akin to Listener, and perhaps Eno Hlaalu was simply mistaken in calling her that.
The Morrowind DB has very little in common with the DB that came after it, so little in fact my personal conclusion is that the Mythic Dawn is operating in Morrowind under the cover of the Dark Brotherhood's name to prevent their larger conspiracy being revealed. Perhaps they themselves don't even know enough DB lore, and the Imperial woman calls herself the Night Mother without really knowing what that means.
Killing the Nerevarine would fall into line with the perogative of the MD; get rid of someone strong enough to stop the Oblivion invasion single-handedly, conveniently appearing in Morrowind and possibly even offering their services to Helseth without being sought after.
After all, why wouldn't Helseth simply seek the services of the Morag Tong, as is tradition? The obvious answer is that he has employed the DB in High Rock and would likely employ them again; there may even be MD agents in the DB who reached out to Helseth. Frankly, the problem with cults is you never know who belongs to them, so any of Helseth's advisors or guards could have suggested hiring this MD/DB conspiracy to kill the Nerevarine.

There is no good in-universe answer. Considering the ships and arms they can make, they have more than enough metalworking and woodworking skill. Crossbows are actually simpler to make than bows once you have the know-how, and certainly more effective.

If I had to guess, tactical efficiency. The crossbow's usefulness in siege warfare is likely made redundant by the presence of battlemages, at least in the sense of Imperial engagements. While on the field, the Empire probably favors the bow for its faster rate of fire, and the Empire, being as large as it is, likely doesn't find too much trouble gathering skilled archers.
Groups like the Fighters Guild look for people with more personal combat skill, and the crossbow isn't all that great to rely on without support.
Though I would imagine crossbowmen would still be deployed for defense by local guardsmen and militia.

Couple of merchants in Vivec and one in Suran have broken (condition 2/300) Glass Daggers for sale. About 20-30 gold each, 200-250 to repair, and Creeper will buy them for the full $4000 gold value.

Ancestor Ghost souls in Common gems are also worth 4000 each, and are fairly easy to kill. The limiting factor early game seems to be access to the empty soul gems

I might try it a second time to see if it was just misfortune, but probably not. It has the same active ingredient as Peyote, and so I'd rather just do that and save the hassle.

On a related note, I'm going to be trying Magic Mushrooms next Tuesday or so. I'll try playing Morrowind, but if I end up playing in the mud in my underwear instead, that's what happens.

Morrowind had the Bitter Coast villages, a bunch of Redoran settlements, and Dagon Fel, not to mention Telvanni taking over every Velothi Tower within reach. There's always the drinks from Arena.
It's often the case that there's books that mention things that don't show up in in articles. For example, the "Khajiit" article might mention something about Khajiiti armour, but you'll have to dig trough texts on your own to find it. I'd imagine it's the same deal with food, and that you'll just have to search for keywords and read texts from there.

Well TES games do have crazy spawn rates, this is true. But then there are still Legion soldiers riding up and down the main roads.

Even so though you'd think that the roads wouldn't be overrun with monsters after only a few days.

I can certainly say that when the player's at level 20+, the roads are plagued with asskickers like Land Dreugh and Minotaur Lords. Fucking Minotaur LORDS. Those kill non-essential NPCs in no time.
