So the first thing you need to mirror websites like these is wget. There are other tools out there but I used wget, so you're otherwise on your own. You don't need Linux to use wget, it's compiled for windows too.

Windows download: https://eternallybored.org/misc/wget/

If you have Linux, open up a terminal and run your package installer. For example:

sudo apt-get install wget

This will install wget.

If you're using Windows, place wget.exe in the folder you want to save the website. It's just easier than editing paths.

Open command prompt/terminal. Point it to the folder you want to save the website to. For windows you should also have wget in this folder like I just told you to.

When you've done all this and are all set, run

wget64 [or depending on what you named the program, this caught me out a few times] -nc -np -r -l inf -4 --restrict-file-names=nocontrol [insert URL here]

-nc: don't overwrite existing files
-np: don't ascend to parent directories (else things get carried away)
-r: descend via links to subdirectories (recurse)
-l inf: descend via links forever (until no more subdirs)
-4: use IPv4 (because where I am, IPv6 is not offered)
--restrict-file-names=nocontrol: this is the most important option imho. If you're downloading files with strange characters, wget will change a huge amount of non-ASCII symbols to percentile representations (e.g. space becomes %20) kinda thing. This is juuuust in case you're running wget on a filesystem which can't handle UTF-8. This option says "leave the filenames as they are and use UTF-8". Nearly all popular filesystems can handle UTF-8 easily nowadays.
[insert URL here]: this is where you put the website (without any brackets). It's good to put the website in quotes in case it has any spaces or things in it.

Depending on your website, you may need to change options. You can read more about the options by running wget --help or man wget.

If you happen to need to stop wget for whatever reason, there are two ways you can continue.

The easiest way is to navigate to the last file you downloaded and delete it. It would have only partially downloaded. You can then run the same command and (providing you had the -nc option) will zip past all the completed files and start from where it left off.

The other way you can resume is by replacing -nc with -c, which means "check every file downloaded so far with the server to see if the lengths match up. If not, tack the rest of the file onto the end to complete the download". This is great if you're downloading a few massive files, but if you're downloading thousands of small files it makes a huge number of requests to the server and takes an eternity to catch up to where you were. But you don't need to delete the file you interrupted.

I recommend the first way. If you can't find the file, search the folder for all files and sort by date. Should be easy to find. For me I learnt this the hard way, and I'm not running wget with the -c option in case I missed anything. Also: the second method does not work on all servers! Some servers don't let you request only part of a file. wget will skip any files that this occurs for, so you'll need to manually delete any corrupted files anyway.

Few other items of note:

If you're using Cygwin then there can be problems with strange symbols in filenames - the download may crash for no apparent reason. Just rerun wget with -nc and you'll be fine.

You'll get a lot of index.html files and the like. I strongly recommend you leave these until the download completes 100%. If you delete these, and you have to stop the download for a bit, then you'll have to re-download them all to get back to where you were. So only delete them when you've finished. A quick file search will locate these easily.

The total file size if you want to download the whole thing is ~126GB
