Phoenix Motorsport Audi #5 had a flat, lost the tire entirely (kek) and limped halfway around the track, meanwhile someone brought a rain tire (because they're expandable) towards it from the outside. meeting somewhere, they fixed it at the side of the track.
Good teamwork, they limped it back to the box, made some repairs and it went back out.

Whenever I drive this track on a simulator I spinout if just 1 tire goes off track onto the dirt and driving fast seems suicidal.

Depends on car and experience. imho, it's less difficult irl because of the sensory feedback from your body through the car. You feel movements, you get real feedback from the tires, etc. Whenever I did get close to crashing, losing grip, etc., the tire gave me a warning slightly before really losing control and I was able to correct it.
