I'm interested in statistics and would like to learn more about it. Please reccomend me some books/resources that I could use to learn more about it.

Is there a recognized sequence of textbooks
that go
combinatorics -> probability theory -> stats?

You don't need a dedicated book on combinatorics, most probably books cover all the combinatorics you need.

For mathematical statistics, the gold standard is Statistical Inference by Cassela and Berger.
Regression is a pretty important subject, just make sure that you study it from the matrix point of view.
Multivariate Statistics is also something you should study.
As for programming languages that is field dependent, but a lot of industry still uses SAS no matter what the fa/g/s say.
