You have to consider post-times vs. what would have being going on in real life. You have to be able to account for literally every minute of every day of your characters. Well, unfortunately it's not a matter of confidence. For any writing to be believable, you'll need a point of reference in reality. Take Tolkien: the charges of Edoras were in part based on his experience during the war with mechanized infantry. So to answer your question in brief, unless you know something about the topic, don't write about it.

That said, you don't have to have fucked your sister to write about fucking your sister. You want to avoid retelling a doujin, of course, and if your only sex knowledge is from porn, then you're going to have a harder time making the sex scene believable. So the solution is to get your fans onboard BEFORE the sex scene, so they're more willing to suspend disbelief. Focus on your interactions with your sister first, and make those believable. You'll need a point of reference, of course: a classmate, cousin, or other family can work, but it has to be based on real interactions, not what you would HOPE would happen in an interaction. Your hopes aren't believable; what actually happens is believable. And if you try retelling a movie, book, or doujin, you're relying on THAT person basing their writing on something believable, and not just what you hope would happen, plus the disadvantage that if anyone else has seen that story, they'll immediately recognize the parallels in your own story.

So, unfortunately, my advice would be to get more life experience to improve your writing. I'd never have been able to pull of my story without adding corrupted, fictionalized accounts of character interaction that really did happen in my life.

I would also suggest extensive reading to improve your use of description. You can occasionally 'fudge' belief through creative use of adjectives.
