The characters are designed to be loose in their interactions.
Peter wildly swings between semi caring dad to negligent asshole. His interactions with Lois are either that of a caring or abusive husband depending on the episode.
Brian is consistently shown to have hidden racial bias yet has been shown to be attracted to black women.
Stewie is very inconsistent in how he interacts with other characters and how they interact with him. His motives and sexuality are also very unclear, wildly shifting between homo and heterosexual between episodes.
The side characters, Chris, Meg and Lois are better, but I imagine that is just because there is less of an emphasis on them in the overarching plots.
I also stopped watching about 5 years ago so maybe they got better.

Not even close. At the beginning the show did seem to have a lesser liberal bias to it, but it was always there though far more tolerable (and funny). Examine the opening song, "It seems today that all you see is violence in movies and sex on TV, but where are those good old fashioned values -- on which we used to rely!" Seth's extreme liberal/atheist view are personified completely by the characters he voices: Peter (his upbringing), Brian (his current ego) with Stewie (you might call Stewie his echo chamber that completes his ego), and Quagmire (his right wing brain part that sort of nags that point of view at him which he struggles to ignore).

Now add in one more part, Seth McFarlen (I am told) has had at least one major mental breakdown (I think about 2 years ago). Seth's character's that he voices are his literal self -- which is very odd cause I don't think he writes the scripts. That's why you can see these character's come about in this way and Quagmire (the anomaly) gain more and more voice/sway.

Not really. They mock right wing views a lot. Sometimes there are small red pills though. This was in an episode about blacks being racist.
