I think Uruks were another subtype of orc, since l I think there's something said about "Black Uruks from Mordor" in the books, I might be mistaken and that might be from a game but I'm pretty positive it's from the book.

Uruk-hai are a stronger breed of Uruks which are just big fucking orcs coupled with some Saruman fuckery crossing them with dunland Men.

Also yes Sauron made his own breed of troll called Olog-Hai, in the movies they are the ones coming throught the gate during the siege of Minas Tirith aswell as the one fighting Aragorn at the Black gate.
