The foxfire series is full of 'the way they used to do everything'; it's the single best resource I know of. Aside from that, you might look into mother earth magazine. It's got lots of things centered around self sufficiency and homesteading. Also, there's a book called where there is no doctor... or maybe it's when there is no doctor. Either way, decent resource.
