I don't know about either of those bikes nor you, so I don't know if they will keep you "entertained".
If you have built up all your basic skills on the DR-Z, you should be able to transfer to pretty much any bike without problems so long as you don't get retarded on it. Just choose whatever you want.

Looking into the possibility of modding some GS500 wheels to fit the bike. I guess it would just take some conversion bearings to make the axle size fit, then spacers to make things line up and hold the wheels in place.

My only gripe with the mosko-moto is I have yet to see it on a bike with minimal to no cargo. Id like to get something I put on and leave on for daily rides and not have to take off but may not use all the 80 liters of storage. After coming out of these pipes through the superheater header, it will have become superheated steam. The extremely hot steam then flows through steam pipes to the cylinders where its pressure moves the pistons which move the wheels of the locomotive.

In a steam engine, the movement of the valve ensures that steam is admitted to and exhausted from the cylinder at the right moment. To know how the valve affects the speed of the locomotive, we have to understand a few terms which are common among steam locomotives operators and enthusiasts. Lap refers to the amount of overlap between the valve and the port. In slow moving locomotives, the long lap on the exhaust port gives time for the steam trapped in the cylinder to expand fully to push the piston. On the other hand, on higher speed locomotives the exhaust port is made to open early (short lap) when the valve is in mid-position thus allowing the steam to escape faster. Furthermore, higher speed locomotives also have long lead which means that the admission port is already open when the piston is at the end of its movement so there is a sufficient steam pressure that will immediately pushes the piston back to begin its next movement.

Cut-off denotes the position of the piston, at the moment the valve is closing the admission port. When the engine is working hard and slowly, long cut-off admits steam for most of the stroke of the piston. On fast running locomotives this will cause back pressure to the boiler. Legit, the only excuse for having a loud aftermarket pipe on anything less than a track-only bike that's been fully tuned and overhauled for more than meager top end gains is having a used bike with one preinstalled and not being able to get a good stock muffler off ebay for budget/availability reasons.

'91 katana 600. clutch lever set to stock, can't say the same for the coarse adjuster as I don't quite know what stock is.

basically, I can shift to 2nd _occasionally_. As in, I can kick the clutch up 2-5+ times before it will catch into 2nd. every gear after seems fine. I just get false neutrals going into second. Shifts into first no problem, ever. Just... not second. If I keep at it, it eventually gets to 2nd. Sometimes it feels like it will catch for a second then as soon as I give some acceleration, it drops back down into a neutral. More often than that, however, it will pop into second after I give it some throttle while in its "neutral" state

It downshifts much better than it upshifts. Usually downshifts perfectly. And not sure if it helps, but every once in a while the shift lever will lock up on me until I slightly release the clutch.

With that said, thoughts? Keep fuckin with the cable? Clutch plates?

Today, for a lark. I decide to wear all my gear. Black Winter armor pants, black ADV Winter jacket, Black and Blue Leather gloves while riding my black DL-1000. A real cold steel looking chap if I may say so.
