It's not the sounds themselves that she uses, but the variety of sources and inventive ways in which she puts them together that truly makes her music magical (or 'experimental', if you will.)

Take my case for example. I am a professional classically trained musician who performs and occasionally composes tradition-minded classical music, but also avoids most classical music as a listener like the plague because the sound of traditional unamplified instruments tends to put me to sleep. At the same I can't stand to listen to most forms of contemporary music because the compositional form and sonic structure tends to be incredibly simplistic (with the only recent musical genres tending to be an exception to this being new wave and, to a lesser extent, synth-pop.)

Now. Grimes - because of the diversity of her musical tastes, both in terms of genre and era - has a very unusual thing going on throughout all of her music, compositionally speaking, because she tends to favor classical music forms (such as chaconnes like what's heard in the song 'Be A Body') and classical sonic structures (like contrapuntal vocal lead lines as heard in the song 'Vanessa') but tends to use the sounds of modern electronic instruments and recording techniques to give those ideas voice.

For someone like me, this combination of classically complex sonic structures and forms with contemporary instrumental and vocal sounds (as well as the occasional switcheroo of classical instruments suddenly playing the role of contemporary electronic ones - such as what happens with the violin solo bridge section of the song 'Venus Fly') makes for a truly magical and experimental body of musical work coming from this particular artist. An aural feast of almost completely unique flavor when compared to the other composer/performers of today - or any time before. Grimes' music, if it happens to appeal to your specific tastes, is virtually unlimited in terms of the degree of that appeal, because of how expertly and effectively it is executed as well as how rare (and thereby experimental sounding) it is.

Keep in mind that all this is merely what I happen to perceive as particularly notable about her music because of the nature of my own musical background. Most everyone with whom I've had this sort of conversation with about what they find particularly interesting in Grimes' music has provided a distinctly different response (relating back to their own pre-existing senses of musical taste.) It's one of the ways you can tell that her music is actually really good. Because two people can listen to one of her songs and come away with completely different reasons for liking it.
