If you need to submit an online application, it's probably a shitty job. I learned that last summer, when I went out looking for work. Everything with an online application, things a generic college student is overqualified for, I got rejected from. But when a relative asked a friend who worked in the tech startup field about jobs I got a well paid position right away, just a glance at my resume and that was it.
The same thing happened when I got back to school, I know people looking for on-campus work who've been applying for things all over trying to get something. When I arrived on campus I emailed the department head about work, and she just gave me a job an hour later.

You've probably got a point there actually, I'm sure some places of work make it difficult for those inept with computers to get the position.

I've got two mates who work in i.t and from the stories they've told me its absolutely bewildering how bad the industry is. Its the usual workplace story though, management don't have a clue what's actually going on, all the ones below them have the medial jobs. Loads of backhand dodgy deals going on and theft.

I considered the role for some time but I don't want to put myself in that position, I'm wanting a higher paying job but I'm not going for any job where I'll be doing something I'll hate. My current job pays well enough for me to have it as a fall back which is nice.

Not sure where to go from here though, I've got a few oppertunites for quick and dodgy cash but I don't know if its something I want to invest heavily into.

That's the issue.
Skipping lunch is making you lose out on essential calories. You need to put food in to build up muscle (the best way to bulk yourself out is with muscle, not fat).
Increase your protein intake a bit - try high protein lunches to provide the proteins needed for building muscle.
Also, you're going to have to do some lifting. Running won't get you anywhere if you want to look a bit more built. That's not to say you shouldn't run; I do. Just try working in some heavy weights sessions (high weight, low reps obviously) several times a week.
You may also want to look into protein supplements like whey and creatine to help accelerate the process.
