Nitride, and of story.

Aside from muh aesthetics and the dirty parts standing out more for cleaning there is literally no reason to choose anything else

Bluing looks the nicest, especially on old guns with wood furniture. Nitrided is probably the most durable and looks good on "tacital" firearms. Parkerized was really just what you did before nitriding, perfectly ok finish but not the most durable or best looking anymore. Stainless is absolute shit I think it looks stupid and stainless steel is not conducive to quality when compared to hard steel in gun parts.
That's my opinion anyway.

Has better rust prevention, but when scratched you cant touch it up without refinishing the whole gun, also it makes the slide to frame section more gritty making the action not feel as smooth as blued or stainless

Most beautiful finish, rusts easily, finish can wear off from hand contact during repeated shooting, can be touched up for minor scratches, as it gets older it looks better

Nitriding pretty much gives it the rust prevention of parkerization while being incredibly hard to scratch, and its significantly smoother. It's probably the best finish from a military standpoint.
