Why would a plane as large as the J-20 need those massive external fuel tanks?

My bet is that it has the fuel efficiency of a semi trailer and they have to put on the tanks for it have any meaningful range. Then for the photo ops they take them off.

Making a plane bigger doesn't automatically make it longer-range. It has fighter-like proportions and will have a fighter-like L/D. It has fighter-like structural margins and will have a fighter-like fuel fraction (UNLESS it carries lighter, flimsier external tanks). And lastly, it uses fighter-like afterburning turbofans so it will achieve fighter-like TSFC (or ISP). That's really all there is to it.

The RD-33MK / RD-93 engines have new turbine blade designs, that are internally cooled, allowing for much higher burn temperatures while not increasing engine wear. It got rid of the smoke issues while also increasing fuel efficiency by roughly 5 to 7%.
This is of course already in every other western design.
The Chinese have also incorporated this tech into their next gen engines for the J-20A / J-10C fighters using the WS-10 and WS-13 engines.
